Protein Pancakes

I love these because they feel like a naughty treat, but they aren't. They are delicious for breakfast or as a post gym snack. You could make a batch of these & freeze them and then defrost & warm them up as and when you fancy them. In my eyes every day should be pancake day!








What you will need:

  • 1 banana, the riper the better
  • 1 egg, preferably free range, from a happy hen
  • 1 scoop (25g) of protein powder, vanilla or chocolate. This time I used Impact Whey Protein from MyProtein in Chocolate flavour
  • 1/2 teaspoon of baking powder

Also...
  • A frying pan
  • Coconut oil
  • A blender (I use the Nutribullet), or you can just use a bowl and a fork
  • A spatula for flipping the pancakes


Ideas for the topping:
Greek yoghurt and berries
Melted dark chocolate - full of antioxidants and has a lower sugar content than milk chocolate
Banana & honey
...Any combination of the above!
Bacon... if that floats your boat


Method:


  • Add the banana, egg, protein powder and baking powder to the blender and whizz up until fully combined. (If you are using a bowl and fork instead, start by mashing up the banana, then add the egg and combine, then add the protein powder and baking powder, mixing it all together)
    If the mixture looks a little thick you could add milk to make it thinner.
  • Preheat your frying pan with some coconut oil, on a low to medium heat. Make sure the pan is not too hot as it burns easily, and it needs to cook through slowly.
  • Pour the mix into the pan. It's best to do a 3 or 4 smaller ones at the same time rather then one big pancake, as it's hard to flip. Don't worry if they don't come out very round!
  • Flip them and cook the other side.
  • Once they're cooked through stack the pancakes on a plate, add your toppings, and marvel in your brilliance. Eat and enjoy with a smug smile on your face!
